I came up with this one myself out of necessity. I wanted a cheesy chicken dinner that tasted great and that I could cook in a Crockpot while I was at work. This experiment did the trick. It's creamy, cheesy, and the chicken melts in your mouth.
Easy Crockpot Southwest Pepper Jack Chicken
3 chicken breasts
1 can Campbell's Southwest Pepper Jack
1 can Campbell's Cream of Chicken Soup
1 (10 oz) can Rotel Diced Tomato and Chilis
Add chicken to Crockpot or slowcooker. Mix soups and Rotel and then pour mix over chicken. Follow instructions on Crockpot or slowcooker for cooking 3 chicken breasts. Usually about 5 or 6 six hours on low works.
This works great if you just want to run home during lunch to prepare dinner. You can throw all the ingredients into the Crockpot/slowcooker and set it to cook in five or ten minutes. When you get home after work, your creamy, cheesy, southwest chicken dinner is ready to serve!
