I like candied yams, but I'm not finatical about them. This souffle, however, I'm finatical about. This is a recipe from my step dad's family. My mother makes it at Thanksgiving and Christmas, and it's one of the dishes I always look forward to.

Sweet Potato Souffle

1 (14 oz) can mashed sweet potatoes
2 cups sugar
3 Tbsp flour
2 eggs
1 (12 oz) can evaporated milk
1 stick margarine (melted)
1 tsp vanilla

Heat oven to 325 degrees. Spray 9X13 baking dish with cooking spray. Mix all ingredients. Pour into baking dish. Bake 1 hour.
