I am diabetic and I love sweets, so I'm always looking for good sugar free desserts. This cheesecake is AWESOME! I make it for the girls at work all the time and they love it!

You can buy a sugar free graham cracker crust, but I don't recommend it. It's not great. I just buy the regular graham cracker crust. Here's the recipe for the filling:

Filling:

2 8 oz. pkgs of fat free cream cheese room temperature

1 lg. sugar free cool whip. don’t buy the huge one, just normal size. 8 or 12 oz size. Thawed.

2 cups Splenda.

Cream together cream cheese and Splenda until smooth. I add a little splenda at a time to avoid lumps. Add cool whip and blend until smooth. Pour into pie crust and chill.

That's it! You won't believe how good this is!

Enjoy!
Hey gabby, I've got a sweet tooth these days and I've been looking for something to snack on that's not filled with sugar or saturated fat, so I gave this a try. I made it late last night and chilled it till after dinner tonight and it was fantastic! If you ask me it doesn't even taste sugar free. I'm going to be keeping one of these around for my late night snacking. Thanks!
It sounds really good! I'm not diabetic, but I do try and watch how much sugar I eat.

Where do you find sugar free cool whip?

Hey Fancy. I've had the most luck at Wal-Mart, but even they don't have it sometimes. It seems like I'm always hunting it down. So when I do find it I grab a couple and keep some in the freezer. The "Light" is actually easier to find.
